Italian Alfredo (Crock-pot)

Italian Alfredo (Crock-pot)
1-2 chicken breasts
1 can cream of chicken soup
couple spoonfuls of sour cream
3 squirts of bottled Italian salad dressing or package of dry Italian dressing mix

Directions:
Mix all ingredients in crock pot and cook on low 3-4 hours. (Chicken can be frozen when this is started.) When it's done shred or cut the chicken into bite size pieces and serve over rice or fettuccine.

Green Chili Chicken Tacos

Green Chili Chicken Tacos
3 boneless skinless chicken breasts (trimmed and pounded flat)
1 jar green salsa
1 pack taco size flour tortillas*
1 pack shredded Mexican cheese

Directions:
Season chicken breasts with salt, pepper and garlic. Grill or pan fry in a little olive oil. They shouldn't take long if you pounded out the chicken. Cut chicken into strips and add back to frying pan with green salsa. Let simmer. While simmering prep tortillas. Put tortillas in a hot pan and sprinkle with cheese on tortilla like making a quesadilla. Just after cheese melts flip tortilla so cheese is face down. cook until cheese is crispy and doesn't stick to pan. Construct tacos and top with lettuce, tomatoes, or any other favorite toppings. *Serves 4-5

*Although it says to use taco size flour tortillas, we ran out and used Lala's and made it into a burrito, and it was DELISH!!

Creamy Chicken Tacos (Crockpot Dish)

Creamy Chicken Tacos (Crock pot Dish)
5-6 pieces of boneless chicken breast
1&1/4 cup Pace Salsa (mild)
3/4 cup sour cream

Directions:
Place chicken in the crock pot with salsa. Cook for 8 hours on high. Shred the chicken and clear the fat on the 7th hour, then add sour cream for the last hour of cooking. Serve on tortillas, lettuce and cheese. Enjoy!!!

Slow Cooker Chicken and Green Chilies

Slow Cooker Chicken and Green Chilies
4-6 boneless, skinless chicken breasts
1&1/2 cup chopped onion
1 can (10.75oz) cream of chicken soup, condensed
2 cans (4oz each) chopped green chilies, with liquid

Directions:
Place chicken in greased slow cooker. Combine remaining ingredients and pout over chicken. Cover and cook on low heat 6-8 hours or on high heat 3-4 hours. Makes 6-8 servings. Serve over steamed rice and a bit of sour cream.

Lemon Chicken

Lemon Chicken
6 boneless chicken breasts, cut into 1-1&1/2 inch pieces
2 cups bread crumbs
2 eggs
4 teaspoons butter
1/4 cup water

Lemon Sauce:
1 lemon
1/2 cup granulated sugar
1&1/2 cups water
2 drops yellow food coloring (optional)
2 tablespoons cornstarch

Directions:
Dip pieces of cut up chicken in beaten egg, and then roll in bread crumbs. Salt and pepper as desired. Fry in butter until brown. Add 1/4 cup of water and simmer for 15 minutes.
Prepare sauce: Combine water, sugar, cornstarch and food coloring in a saucepan. heat over medium heat until thick. Remove from heat and add juice from lemon. Pour sauce over chicken and simmer for 20 minutes. Serve with rice.

Homemade Alfredo Sauce

8 oz cream cheese
1/2 cup butter
3/4 cup parmesan cheese
1/2 cup milk
garlic powder and pepper to taste
Directions:
Heat over low heat. Serve over hot noodles. I served mine with breadsticks and it was delish!!

Cheerio Treats

Cheerio Treats

1/2 cup creamy peanut butter
3 tablespoons margarine/butter
1-10oz  pkg marshmallows
5 cups Honey Nut Cheerios
M&Ms- as many as desired!

Directions:

Melt margarine and marshmallows together until smooth. Stir in peanut butter. Add cereal. Mix well. Add 1 large package of M&Ms. Press into a greased pan. Allow treats to set up before cutting into squares.

Pizza Crust

Pizza Crust

1&1/2 cups water
1&1/2 tablespoons olive oil
3&3/4 cup flour
1&1/2 tablespoons sugar
1&1/2 teaspoons  salt
1&1/2 teaspoons yeast

Directions:
Combine ingredients. Divide in half and roll out to sired thickness. Brush with oil. Cover and let rise for 15 minutes. Put on your sauce, cheese and toppings and bake for 25-30 minutes at 400.

Candied Yams (these taste like pecan pie)

Candied Yams

3 cups chunky mashed yams
1/2 cup sugar
2 eggs
1/3 cup milk
1/2 stick butter
1 teaspoon vanilla

Topping:
1 cup brown sugar
1/3 cup melted butter
1/2 cup flour
1 cup nuts

Directions:
Mix top ingredients and place in 9X13 (I used an 11X15, since it is pretty rich). Mix topping and place by small spoonfuls on top ( will be thick). bake 40-45 minutes at 350.

Lil Smokies

1-18oz bottle BBQ sauce, your fav
1-18oz jar grape jelly
2 pkgs. Lil Smokies
Direction:
Mix BBQ sauce and grape jelly in crock pot; add Lil Smokies. Cook 6 hours on low in crock pot. YUMMY!!

Cafe Rio Rice

Cafe Rio Rice
3 cups water
4 teaspoons chicken bouillon
4 teaspoons minced garlic
1/2 bunch cilantro
1 can green chilies
3/4 teaspoon salt
1 tablespoon butter
1/2 onion
1&1/2 cups rice
Directions:
Blend cilantro, green chilies and onion together in food processor or blender Bring water to a boil and add the ingredients including the blended ingredient's. Simmer covered on medium low for 25-30 minutes. Watch carefully as this can burn easily.

1 tablespoon chili powder
1 tablespoon cumin
3 cloves garlic, minced
5 lbs. chicken
Directions:
Cook all together in a crock pot for 4-5 hours. Shred meat and cook an additional hour.

Lemon Squares

Lemon Squares
Crust:
2 cups sifter flour
1/2 cup powdered sugar
1 cup softened butter
Directions:
Preheat oven to 350. Mix flour and powdered sugar. Cut in butter (work in well with a fork), then pat mixture into a greased 9X13, or 2 8X8 baking dishes cutting the mixture in half. Bake for 15-20 minutes. Mix filling while crust is baking.

Filling:
4 eggs, beaten well
2 cups sugar
3 tablespoons flour
1/2 teaspoon baking powder
5 tablespoons lemon juice
powdered sugar for topping
Directions:
Combine all filling ingredients except for powdered sugar; mix well. Pour onto hot crust. bake for another 20 minutes. remove from oven and sprinkle powdered sugar  over cake; cut into squares while warm, not hot or cool. refrigerate and serve. Makes 24-30 squares.

Beans in Crock Pot

Pinto Beans in Crock Pot (re fried)
Sort dry beans and look for "rocks", or beans that don't look good. You can always cook bacon until crispy to add to beans for flavor, I do not. Rinse beans in colander. Add to crock pot and cover with water 2 inches above beans. Add salt, garlic powder, pepper, Chile powder, cut up 1 medium onion fine. Cook until done, on HIGH, 4 hours. Stir beans 1 time every hour. Try a bean after the 4 hours and if it's not done, cook longer.
For Re Fried Beans...
Get all beans out of crock pot, adding may be a 1/4 cup of the liquid, 1/2 cup sour cream and then blend in a blender. Or you can omit the sour cream and just use the liquid that the beans cooked in and then blend.
After an hour of cooking, taste the broth. If it has good flavor, then your beans will be good!:)

Banana Shake

Banana Shake
Add 1 whole banana to blender, all sliced, 2 cups ice, 4 teaspoons sugar and pour milk in blender until it covers the ice and banana. Blend and serve. 

Orange Julius

Orange Julius
Put 1&1/2 cups water, 1/2 cup milk, 1/2 cup sugar, 1 teaspoon vanilla, 1/2 can frozen orange juice concentrate, and 2+ cups of ice in a blender. Blend until ice is well crushed and serve.

Yummy Cottage Cheese Dessert

1-16oz cottage cheese
1 can fruit cocktail
1 pkg jello, any flavor, we like raspberry
8oz cool whip
Directions:
Mix and serve. Refrigerate any leftovers!

Granny's Hash Brown Casserole

Granny's Hash Brown Casserole
30oz pkg frozen hash browns
2 cups sour cream
2 cups shredded cheese
1/2 cup chopped onion
1 stick of butter
1 teaspoon salt
1/4 teaspoon pepper
Directions:
Melt butter and add cheese till melted then remove from heat. in a separate bowl mix sour cream, onion, salt and pepper. Add butter and cheese (mixed). Mix with frozen hash browns and spread in 9X13 casserole dish. Lighty dot top with butter. Bake at 350 for 30 minutes.

Barbecue Chicken with Corn on the Cob

Barbecue Chicken with Corn on the Cob
3-4 chicken breats*
1 jar barbecue sauce, we prefer jack daniels bbq sauce
5-6 ears of corn**
Directions:
Just layer the chicken in the bottom of the crock pot, cover with sauce. Next wrap the corn in foil and set on top of the chicken and sauce. Cover and cook on low 6-7 hours.

*use as much as you need to feed your family or all that fits in your crock pot
**we have only used the frozen ears of corn, not to sure how it would work with fresh ears of corn

Chocolate Peanut Butter Parfaits

Chocolate Peanut Butter Parfaits
3 tablespoons milk
3 tablespoons peanut butter
1 cup thawed COOL WHIP whipped topping
2 cups cold milk
1 package (4serving size) JELL-O chocolate flavor instant pudding and pie filling
1/4 cup chopped peanuts
Directions:
STIR 3 tablespoons milk into peanut butter in medium bowl until smooth. Gently stir in whipped topping.
POUR 2 cups milk into medium bowl. Add pudding mix. Beat with wire whisk 2 minutes. Alternately spoon whipped topping mixture and pudding into 6 parfait glasses.
REFRIGERATE until ready to serve. Sprinkle with peanuts.

Makes 6

Dirt Cups

Dirt Cups
1 package (16oz) chocolate sandwich cookies
2 cups cold milk
1 package (4 serving size) JELL-O chocolate flavor instant pudding and pie filing
8oz COOL WHIP whipped topping, thawed
8-10 (7oz) paper or plastic cups
Suggested garnish: gummy worms, or other gummy candies, candy flowers, chopped peanuts, granola
Directions:
CRUSH cookies in a zipper-style plastic bag with rolling pin or in food processor.
POUR milk into large bowl. Add pudding mix. Beat with wire whisk 2 minutes. Stir in whipped topping and 1/2 of the crushed cookies.
PLACE about 1 tablespoon of the crushed cookies in each cup. fill cups about 3/4 full with pudding mixture. Top with remaining crushed cookies.
REFRIGERATE until ready to serve. Garnish as desired.

Makes 8-10 servings

For Sand Cups: Use 1 package (12oz) vanilla wafer cookies and JELL-O vanilla flavor instant pudding and pie filling.

Easy Eclair Dessert

Easy Eclair Dessert
27 whole graham crackers, halved
3 cups cold milk
2 packages (4serving size) JELLL-O  vanilla flavor instant pudding and pie filling
1 tub (12oz) COOL WHIP whipped topping, thawed
1-16oz chocolate frosting
Directions:
ARRANGE 1/3 of the crackers on bottom of 13X9 inch baking pan, breaking crackers to fit, if necessary.
POUR milk into large bowl. Add pudding mixes. beat with wire whisk 2 minutes. Gently stir in whipped topping. Spread 1/2 of the pudding mixture over crackers. Place 1/2 the remaining crackers over pudding; top with remaining pudding mixture and crackers.
REMOVE top and foil from frosting container. Microwave frosting container on HIGH 1 minute or until pourable. Spread evenly over crackers.
REFRIGERATE 4 hours or overnight. Cut into squares to serve.

Makes 18 servings

Miniature Cheesecakes

Miniature Cheesecakes
1 package (11.1 oz) JELL-O No Bake Real Cheesecake
2 tablespoons sugar
1/3 cup butter or margarine, melted
1&1/2 cups cold milk
2 squares BAKERS semi sweet baking chocolate, melted (optional)
Directions:
MIX crumbs from mix, sugar and butter thoroughly with fork in medium bowl until crumbs are well moistened. Press onto bottoms of 12 paper-lined or foil-lined muffin cups.
BEAT milk and filling mix with electric mixer speed 3 minutes. (Filling will be thick.) Spoon over crumb mixture in muffin cups. Drizzle with melted chocolate, of desired.
REFRIGERATE at least 1 hour or until ready to serve. Garnish as desired.

Grandma Adair's Walnut Bread

Grandma Adair's Walnut Bread
1 egg
1 cup sugar
1 cup milk
2 cups flour
1/2 teaspoon salt
2 teaspoon baking powder
1 cup broken walnuts
Directions:
Beat eggs and sugar well. Add milk to blend. Sift flour, baking powder and sat. Stir in walnuts. Bake in was paper lined 5X9 pan for 1 hour.

Cherry Pike

Cherry Pike
1/3 cup milk
1/2 cup sugar
1&1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup plus 1 tablespoon flour
1 lb. can sherry pie filling
1/4 lb margarine or butter
whipped cream or vanilla ice cream
Directions:
Mix together milk, sugar, flour, baking powder and salt. Heat the cherry pie filling. Melt the margarine in baking dish. pour mixture over melted butter or margarine. Top with heated cherries. DO NOT STIR!! Bake at 350 for 30 minutes or until crust is brown.

Enchilada Bake

2 boxes frozen taquitos
1 large can re fried beans
1 large can enchilada sauce
1 can diced green chilies
Directions:
In baking dish layer sauce, taquitos, beans, green chilies. Top with grated cheese. Bake at 350 for 40-45 minutes.

Green Chile Cheese Rice

2 cups cooked instant rice
1 can condensed cream soup (celery, chicken, etc.)
1-4oz can diced green chiles
8oz sour cream
1/2lb. cheese (spread)
Directions:
Mix together. Bake or microwave to warm and melt cheese.

Dip for Fruit

8oz cream cheese
7oz marshmallow cream
1 teaspoon orange juice

Chile-Rellanos Casserole

Chile-Rellenos Casserole
1 pound ground beef
1/2 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
2-4oz cans diced green chile's-cut in half/split
1&1/2 cup shredded cheese
1&1/2 cup milk
1/4 cup all purpose flour
1/2 teaspoon salt
dash pepper
4 beaten eggs
several dashes bottled hot pepper sauce
Directions:
In skillet brown beef and onion. Drain off. Sprinkle meat with 1/2 teaspoon salt and 1/4 teaspoon pepper. Place half the chilies in baking dish. Sprinkle with cheese, top with meat mixture. Arrange remaining chilies over meat. Combine remaining ingredients. beat till smooth, pour over meat-chili mixture. Bake in moderate oven (350) 45-50 minutes or until knife inserted just off center comes out clean. Let cool 5 minutes and cut in squares to serve.

Play Dough

Play Dough
1 cup flour
1/2 cup salt
2 teaspoon cream of tarter
1 tablespoon oil
1 cup water
food coloring (optional)
Directions:
Mix together in saucepan. Cook 3 minutes or until all liquid is absorbed. Stir constantly. It will form a ball and will not be sticky. Turn out onto counter. let cool a little and mix desired coloring into it and start kneading and kneading and kneading. Store in airtight container. Food coloring does stain hands, so if you have gloves you may consider using them or just leave the play dough white!

Double Decker M&M Brownies

Double Decker M&M Brownies
3/4 cup butter
1 cup sugar
1 cup brown sugar
3 eggs
1 teaspoon vanilla
2&1/2 cup flour
1&1/2 teaspoon baking powder
1/2 teaspoon salt
1/3 cup cocoa powder
1 tablespoon melted butter
1 cup baking M&Ms<---I used the mini M&Ms
Directions:
Grease 13X9 pan. In large bowl cream butter and sugars, beat in eggs and vanilla. In medium bowl combine 2&1/4 cup flour, baking powder, and salt. Blend into cream mixture. Divide batter in half. Blend together cocoa powder and melted butter and stir into one of the half mixture bowl. Spread cocoa dough evenly into baking pan. Stir remaining 1/4 cup flour and 1/2 cup M&M's into remaining dough mixture; spread M&M mixture over the cocoa mixture. Sprinkle with remaining M&M's. Bake at 350 for 25-30 minutes.

Razzleberry Crunch

Razzleberry Crunch
1 cube butter, room temperature
1 pkg. yellow cake mix
2 cans cherry or blueberry pie filling or mix one can of each
1/2 cup chopped walnuts, pecans, or almonds (optional)
Directions:
Cut stick of butter into package of cake mix until crumbly. Reserve half of this mixture for the top. Pat the remaining mixture lightly into an oblong 9X13 greased glass baking pan. If using a cherry and a blueberry pie filling, mix both cans in separate bowl, then spread over the crumb mixture. Blend 1/2 cup of nuts and the reserved mixture together. Sprinkle chunks of the crumble over the top of the pie filling. Bake for 45 minutes at 350, or until golden brown on top and the bottom. Serve warm with whipped cream or a scoop of ice cream.

Funnel Cakes

Funnel Cake
1 egg
3/4 cup milk
1 cup flour
1 teaspoon baking powder
1/8 teaspoon cinnamon
1/4 teaspoon salt
Directions:
Heat 1&1/2 to 2 inches of oil to 350. In medium bowl, beat egg with milk. Stir in flour, baking powder, salt and cinnamon. Mix until smooth. Pour 1/4 cup of batter into a funnel, with finger covering the little hole. Drizzle batter into the hot oil, making a random pattern about 6-7"in diameter. Cook about two minutes on each side. Sprinkle with powdered sugar and enjoy. You can also add fresh cut up strawberries, whip creme, chocolate sauce and nuts, to make a sundae, don't forget the cherry! This recipe makes 6 funnel cakes.
